Zucchini Bread... A Sunday Morning Staple

Zucchini Bread B. Lowe

  • 2 cups sugar
  • 1 cup oil
  • 3 eggs
  • 3 cups flour
  • 1 teaspoon baking soda
  • ¼ teaspoon baking powder
  • 1 teaspoon vanilla
  • 2 cups grated zucchini
  • 1 tablespoons cinnamon
  • ½ cup nuts
  • 1 teaspoon salt

Bake 325°. 1 hour. 2 bread pans or 1 pan large & 2 small. Greased and Flour.

Looking for some variety? buy the mini choc chips and mix in a 1/2 - 1 cup before baking (if you use the reg size chips contemplate chopping or throwing them in after cooking for about 25 minutes...otherwise they all sink).

Also - since I'm giving out opinions here...serve warm with butter. Not the healthiest but so tasty.
