Bruschetta

Such an unassuming title for my return. I'm back!

In addition to now having new recipes, Red Box Recipes is now mobile friendly (that's right I have mad techy skills...plus google makes it all happen with the click of a button)

Here's the first recipe out of the gate:

Fresh Bruschetta

1 french loaf bread (pillsbury will do or a loaf from the store)
2 tabs Basil
2 tabs parsley
5 oz feta
1 small tomato
1/4 of a small red onion
Olive oil

Turn the oven on broil. On a small plate like they do in the restaurant- put a couple of tablespoons of olive oil, cut the french loaf, dip one side into the olive oil and lay that side up on a cookie sheet. Continue until the entire loaf is done. Place into the oven for 3-4 minutes or until slightly browning - watch them, they go quick!

Chop the basil, parsley, tomato, and red onion. Mix with Feta in a small bowl. If pre-making this, stop here.

Once the bread is cooled ( you don't want it heating up the mixture!) take a small spoon and top each bread with the mixture.

Serve.

(Leftover insides - use them to top a chicken or turkey sandwich. Yum!
